A tea infuser is part of the brewing system and can be used with a brewing kettle and tea leaves to brew tea. While not required, it can be used to help with the tea brewing process. The advantage of using a tea infuser is that it will lock in the intensity of the tea when the infuser is removed from a kettle for the entire kettle's contents, ensuring that tea is never over-brewed. Unlike a coffee press, timing is still important in determining when to remove a tea infuser from a kettle for an appropriate intensity (weak vs strong).
Tea leaves must be removed from a packet or tin before placed inside an infuser; they cannot be PUT directly into the infuser from a tea packet or tin. Next, the tea infuser is placed inside a brewing kettle. If the kettle does not already contain boiling water, it must be placed on an appropriate heat source and brought to boiling. Once brought to boiling, the tea will begin to steep. LOOK IN the kettle to see what the current color intensity of the water is before determining when to remove the infuser from the kettle. Once removed, the tea leaves inside the infuser are automatically discarded and the tea in the kettle is locked in at the current intensity.
